Toby Takes Masterclasses with Shrewsbury’s Head Chef

As part of his Duke of Edinburgh Award skills section, Toby R (IV, O) has been developing his culinary expertise through a series of sessions with Shrewsbury School’s Head Chef, Cal Smith, from Independents by Sodexo.
Working behind the scenes in the Kingsland Hall kitchens, Toby has been learning a range of practical skills, from butchery and food preparation to professional cooking techniques, while gaining a fascinating insight into the workings of a busy school kitchen.
Shrewsbury’s Head Chef, Cal Smith, Independents by Sodexo, said:
“Toby has been great and has a natural flair and passion for cooking, it has been a delight to have him in the kitchen and teach him different techniques and methods with the school kitchens, supporting him on his Duke of Edinburgh award is a huge privilege.”
Reflecting on the experience, Toby said:
“I was delighted when I was given the opportunity to spend time cooking in Kingsland Hall. Seeing the kitchens from a completely different perspective to what most people experience was fascinating.
“Usually, each session begins with learning different cooking techniques and preparation methods.
“I’ve particularly enjoyed learning more about how to prepare meat properly and make the most of every ingredient. One of my goals is to encourage more people to appreciate game cooking, and these sessions have really helped me develop my confidence and skills in the kitchen.”
